“Part of what I want to do is draw people in who wouldn’t otherwise be inclined to approach herbalism- by doing it with flavor, in a way that’s accessible to people. Putting something in a cocktail as opposed to having to make a tea every day. It’s harder than you’d think to establish that practice.
Another way is salt. We all salt our food, so the salts are a really easy entry level way for people to become acquainted with tonic herbalism. It’s an attractive way too- they’re colorful, they smell good, people want to be involved.”

An event of this magnitude usually requires months of planning & an expansive budget. In the end, the event raised more than $20,000 for the Northeast Organic Farming Association of Vermont’s Farmer Emergency Fund.
In the words of the evening’s host, Devon Swinburne of South Londonderry, it was an elegy to appetite. An evening of equilibrium. A fellowship of food & friendship. Do not let your hope weary, she toasted the table in the midst of the meadow, as the sun’s last glow gave way to the clear sky’s first stars. Vermont will put it's strong head down, grow a thick skin, & with will & work, begin again.”
