Although it’s native to northwestern Europe, northern China, and Russia, the shrub thrives in Vermont’s climate, so we are able to source this coveted berry locally from LEGENDARY permaculturist BUZZ FERVER of Perfect Circle Farm, in Berlin, VT.

Obtaining 2,000 lb of these in the plant’s brief harvest season is no small feat. Buzz & his squad put in WORK to coax fruit from tree: it’s called buckthorn for a reason- the berries grow encasing a branch absolutely RIDDLED with the fiercest of long, thick thorns. The only way around the painfully slow & splintered process that would be picking the berries requires these gaudy colas to be cut by the branch. The branches are then frozen & subsequently whacked until the berries relinquish their hold, falling into a barrel. With them comes plenty of leaf. To separate the leaf, the berries are laboriously dropped in front of a fan, so that the heavy berries fall while the light leaves flutter away- a process called WINNOWING. Finally, the freezer.

The incredibly astringent sea buckthorn berry provides an unexpectedly bright, almost tropical flavor when you treat it just right.
